How to set creamy curd perfectly at home
Summers are here and to keep our gut cool, we resort to various home remedies. Curd is one such superfood that offers great nutritional value and keeps your stomach cool in summer. You can also use curd to make several dishes including kadhi pakoda, mishti doi, and lassi. But not all of us know how to set a perfect curd that is creamy and not runny.
If you are one of those, who are not great with setting curd then follow these simple tips and some hacks to make perfect and creamy curd next time.
Ingredients to set curd
Take 1-liter milk
1 tablespoon curd culture (You can also use leftover curd as curd culture)
Recipe to set the perfect curd
Bring the milk to boil and then keep stirring on low heat for 10 minutes.
After that, let the milk cool down to a warm temperature.
Froth the milk properly by juggling the milk from one pan to another for five to six times. You can also use an egg beater to froth the milk.
Add the curd culture to the milk and mix it properly.
Put the milk in a thick bowl or casserole, put the lid and leave it in a warm place for six to eight hours to set. You can also leave it overnight.
Hacks for a creamy curd
Use an earthen bowl to get a nice flavor.
Use fresh curd culture and mix it uniformly with the milk. Sour curd culture will sour your curd too.
Do not burn the milk while trying to thicken it. Simmer it for 10 minutes maximum.
Properly froth the milk for a thicker curd.
If you live in colder weather then curd might take more time to set. You can cover the vessel with a warm cloth like a pullover or shawl or leave it inside the oven.
Use full cream milk for a creamier curd.
